Halloween Sugar Cookies


Sugar Cookie Recipe 

2 sticks soften butter
1 cup sugar
1 egg at room temperature
3 cups of flour
pinch salt
1 tsp. baking powder
2 tsp. pure vanilla extract if you have a vanilla bean even better put the seeds in the cream mixture


Cream butter and sugar until white and fluffy, add egg beat until well incorporated. Add vanilla. 

Sift flour with salt, baking powder and add in intervals to creamed mixture. 

Roll out into floured surface, cut into desired shape with cookie cutters. 

Bake in a 350 degree oven.  Depending on your oven it can take 8-12 minutes.  Check until slightly golden. 

You can decorate with royal icing or just take powder sugar and lots of cinnamon and sift on top.  Either way they are a delicious cookie. 


Homemade Candy Corn


Makes about 3 cups of 3/4-inch pieces 

A few tips: Heatproof gloves are a good idea here, especially if you’re going to be making this an activity with kiddos, to protect your hands from both the hot spots in the candy dough and staining from the food coloring while kneading it in.

I found it was helpful to divide each color or dough into a few smaller portions before forming them into shorter ropes instead of trying to make one superlong one. I also might have been a little slow in my rope-forming, because the candy got a little too firm to work with at times, but that was remedied by tossing the dough into the microwave for five seconds or so just to warm it a bit. When the ropes were all formed and lined up together, I popped them in a low oven for a few minutes to warm them again so they’d smoosh together and adhere better when rolled.  

Nonstick cooking spray is your friend here–I used it on the bowls for dividing up the dough and on the work surface.


2 1/2 cups confectioners’ sugar, sifted
1/3 cup powdered milk
1 cup granulated sugar
2/3 cup corn syrup
1/3 cup salted butter
1 teaspoon pure vanilla extract
Red and yellow food coloring 

In a medium bowl, whisk together the confectioners’ sugar and powdered milk and set aside. 

In a medium saucepan, combine the granulated sugar, corn syrup and butter. Bring to a boil over high heat. Reduce the heat to medium and boil for five minutes, stirring occasionally–the mixture will reduce and thicken. Remove the pan from the heat and stir in the vanilla. Add the dry ingredients and stir to blend well. Transfer the dough to a bowl sprayed with nonstick cooking spray and let it cool until it’s cool enough the handle. 

Divide the dough into thirds, placing each third in its own bowl. Kneading food coloring into the dough with your hands, color one third yellow, another third orange, and leave the last third white. 

Form each third of dough into a long thin rope, about 1/4 to 1/2 inch in diameter. Lay the ropes side by side, touching each other: white, orange and yellow. To ensure they stick together, place a piece of waxed or parchment paper on top and roll gently with a rolling pin just to get the ropes to adhere, not to flatten them too much. Using a sharp knife or kitchen scissors, snip the dough into triangles. Keep a damp cloth nearby so you can wipe the knife or scissors clean of candy residue every so often. Let the finished kernels set in the open air in a single layer until they are dry to the touch, about an hour or two. Store in a single layer in a cool, dry place.


Cheesecake Brownie Tombstones


Ingredients

BROWNIE BASE:

•200g of good quality dark chocolate, chopped – I used Lindt 70% cocoa

•200g of unsalted butter, at room temperature

•250g of caster sugar

•3 eggs

•3/4 cup of plain flour, sifted


CHEESECAKE TOPPING:

•150g of caster sugar

•400g of cream cheese

•2 eggs

•1 teaspoon of peppermint extract (or to taste)

•Green food colouring


COOKIE TOMBSTONES:

•185g butter, at room temperature

•3/4 cup caster sugar

•1 teaspoon vanilla extract

•1 egg

•2 cups of plain flour

•1/3 cup of good quality cocoa


Instructions 

1. Preheat oven to 170 degrees celsius (340 Fahrenheit) and grease and line a 20cm x 30cm pan and line with baking paper.

2. Place the chocolate into a microwave proof jug and microwave in 20 second bursts until just melted. Stir until the remaining chocolate melts and set aside to cool.

3. In a mixer fitted with a paddle attachment beat the butter and sugar until pale and thick.

4. Add the eggs, one at a time, and beat well after each addition.

5. Stir in the melted chocolate and then fold through the sifted flour.

6. Pour into the prepared pan.

7. In a separate mixing bowl, prepare the cheesecake topping. Beat the cream cheese, sugar, peppermint extract and eggs until smooth. Add the green food colouring until you reach your desired level of green.

8. Spread the cheesecake topping over the brownie base and bake for 40 to 45 minutes.

9. To make the cookie tombstones, preheat your oven to 170 degrees celsius (340 Fahrenheit) and line 2 baking trays with parchment paper.

10. Using an electric mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy. Add the egg and beat until combined before sifting in the flour and cocoa.

11. Turn the mixture out onto a lightly floured bench and roll out to your desired thickness.

12. Use a tombstone shaped cookie cutter cut out the cookies or cut them freehand, as I did.

13. Bake for 13 to 15 minutes. Place onto a baking rack to cool.

14. To assemble the tombstones attach the cookies to the back of the brownies using a little melted chocolate.


Notes: Once cooled, place in the refrigerator to set before cutting into rectangles.


Pumpkin Oreo Truffles



Recipe for truffles:  

1 package crushed Oreos mixed with 1 (8 oz) block of softened cream cheese formed into balls. 

This time I broke a pretzel stick into bits and stuck them in the truffles before I froze them (on waxed paper lined cookie sheet) for the required 20 minutes or so. 

Dipped them into some orange melting disks and then piped on some leaves and vines with a little royal icing I had leftover.


A quick icing you could use for these instead of royal is:

1 1/4 cup sifted powdered sugar

1 teaspoon light corn syrup

Water, 1 teaspoon at a time until a thick, spreadable consistency has been reached.

If you add too much water, just sift in some more powdered sugar, this is not an exact science.

Color this green with gel food coloring and cut a teeny tip off of sandwich sized Ziplock and pipe on your leaves.



Voila ~ that’s it! A question I seem to get asked a lot is how to I get the outside so smooth…here’s the first of my 2, very scientific, very culinary answers… A nice healthy dollop of Crisco.  

Yes, that’s right…Crisco…deal with it. Second ~ I tap the heck out of them…tap, tap tap until the excess drips off. If you are using the candy melting disks, you know that they set quickly so by the time you’re done tapping they more than likely will have begun to set, so you won’t have that ugly pool of extra melting chocolate at the bottom of your truffle.


Pumpkin Cookies with Cream Cheese Icing



Yield: 24 Cookies


Ingredients

 1 cup butter flavored shortening
 1 cup unsalted butter; softened
 2 cups white sugar
 2 cups canned pumpkin (solid; not pie mix)
 2 eggs
 2 teaspoons baking soda
 3 teaspoons ground cinnamon
 2 teaspoons pumpkin pie spice
 1/2 teaspoon nutmeg
 1 teaspoon salt
 4 cups all-purpose flour


Directions

1. Cream shortening, butter, white sugar and pumpkin. Add eggs and mix well. 

2. Sift together the baking soda, ground cinnamon, pumpkin pie spice, nutmeg, salt and flour. Add to pumpkin mixture and mix well. 

3. Drop from spoon to cookie sheet. Bake 13-15 minutes at 350 degrees F (175 degrees C).


Cream Cheese Icing
 
 Ingredients

 1 (8 ounce) package cream cheese, softened
 2 tablespoons butter, softened
 4 cups confectioners’ sugar
 1 teaspoon vanilla bean paste (extract will also work)
 2 tablespoons milk


Method 

Mix the cream cheese with the butter, confectioners’ sugar, vanilla extract, and milk in a bowl. Heat in a microwave for 15 seconds. Drizzle spoonfuls over the cooled cookies and smooth with the back of a spoon or a spatula.


Notes 

I wanted big cookies, so I measured each cookie out to 1/4 cup, I shaped the cookies into circular blobs and smoothed the tops with dampened finger tips.- When the cookies were just slightly warm, I spooned on the cream cheese icing, smoothed the surface and tossed on some fall inspired sprinkles.-This icing recipe does not harden! 


Great Pumpkin Cookies


These cookies have the great taste of pumpkin and spice, and are loaded with crunchy toasted walnuts and sweet raisins.  You may choose to bake these great cookies and just eat them as is, without the decoration. Or, add the orange glaze and decoration to make them look like they are just picked from your pumpkin patch. 

Ingredients:

Dough:

2½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¾ teaspoon salt
2½ teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
¾ teaspoon ground ginger
½ cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
¾ cup firmly packed light brown sugar
1 large egg
2 teaspoons pure vanilla extract
1¼ cups canned pumpkin
1½ cups toasted walnuts, coarsely chopped
1½ cups raisins 

Orange Glaze: 

6 cups confectioner's (powdered) sugar
¼ cup plus 2 tablespoons corn syrup
¼ cup plus 2 tablespoons freshly squeezed orange juice, plus more if needed for thinning
1 teaspoon pure vanilla extract
¼ teaspoon pure orange extract
Orange food coloring
Black food coloring, optional


Decoration: 

About 8 ounces Rolled Fondant for pumpkin leaves
Green Food Coloring 
Pepperidge Farm Cream Filled Pirouette Rolled Wafer Cookies, for pumpkin stems, cut into 1 inch pieces 

Directions:

1. Preheat oven to 350 degrees F. Prepare 2 large baking sheets; lightly grease with shortening, or line with parchment paper, or line with a non-stick baking mat.


Dough:

2. In a medium mixing bowl, combine flour, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and ginger; sift or whisk together to mix.  Set aside. 

3. In a large bowl of an electric mixer, combine butter and granulated sugar; beat together until thoroughly combined. Add brown sugar and continue beating until mixture appears light and fluffy. Scrape down the sides and bottom of the bowl with a rubber spatula so the mixture blends evenly. Add egg and vanilla; beat until thoroughly mixed. 

4. With the mixer on low speed, add about one third of the flour mixture, mix just until the flour is almost completely blended.  Scrape the bowl down, and add about one half of the pumpkin, blending just until mixed. Scrape the bowl down again and continue alternating with the flour mixture and pumpkin, ending with the last portion of the flour, and stirring just until blended. 

5. Remove the bowl from the mixer. Using a large rubber spatula, fold in the walnuts and raisins.


Bake:

6. Drop mounds of dough, about 2 heaping tablespoonfuls, and spacing dough 3 to 4 inches apart onto baking sheets. Bake 20 to 25 minutes or until cookies are set and the edges are very lightly browned. Remove cookies from baking sheets with a metal spatula and place on a wire cooling rack to cool. Tip: Try to keep the dough mounded like a pumpkin shape. The cookies will spread some while baking. An ice cream scoop is ideal for making uniform-sized cookies. 

Decoration:

7. Plan on making the pumpkin leaves and vines at least a day in advance so they will be ready when time to use. Knead the green food coloring into the fondant to make the desired shade of green. 

8. Roll the fondant out to about 1/8 or 1/16 inch thick on a pastry mat or pastry board lightly sprinkled with confectioners’ sugar or cornstarch, or lightly greased with vegetable shortening. Cut out leaves using a 1 inch leaf cookie cutter. Use the back of a knife to press veins into each leaf. Roll small pieces of scraps into skinny logs and loosely spiral wrap them around a ¼ thick dowel to form spiral vines; set aside for about 10 minutes to slightly dry. Slide the vines off the dowel. Let the leaves and vines dry several hours or overnight. 

Orange Glaze:

9. Sift the powdered sugar into a large mixing bowl. Set aside.  

10. In a small saucepan over medium heat, combine the corn syrup and orange juice and bring to a boil. Remove from the heat and pour the hot syrup mixture into the powdered sugar. Add vanilla extract and orange extract and stir until completely combined and glaze is smooth and free of lumps. 

11. Transfer about 1/3 cup to another bowl to make the pumpkin ribs. Add orange food color to make a light color orange. Cover tightly with plastic wrap to keep from drying out. Set aside. 

12. With the remaining glaze, add orange food color to make the desired shade of pumpkin orange. Stir until completely combined. The glaze should be thin enough to easily spread over the cookies. Tip: Stir in a drop of black food color to make a richer color of orange for the main pumpkin color.


Glazing and Decorating Cookies:

13. Place a large wire rack on top of parchment paper or wax paper to catch drips and make clean up easier. 

14. Place one cookie at a time on a fork and hold over the bowl of pumpkin colored orange glaze. Spoon glaze over cookie until completely covered.  

15. Run a small spatula under the cookie to scrape off any excess. Place the glazed cookie on the wire rack and insert a wafer cookie in the middle of the glazed cookie for the pumpkin stem. Let the glazed cookie sit to allow the glaze to partially harden, 15 to 30 minutes. If the glaze gets too thick to spread easily, stir in a few drops of orange juice until the glaze is fluid enough to spread easily. Repeat with remaining cookies. 

16. Spoon the reserved light orange glaze into a small plastic freezer bag. Put a little piece of tape on corner to reinforce the tip, and then roll over top of bag to keep neater. (You could also use a plastic squeeze bottle with a tip available in decorating stores or a pastry bag and decorating tip), Twist the top of the bag to create some pressure to make easier to squeeze out. Cut a tiny corner off the tip of the bag. 

17. Pipe 6 to 8 ribs over the top of each cookie. 

18. For each glazed cookie, put a dab of leftover glaze on the bottom of one fondant leaf and one spiral curl and place on the glazed cookie next to the stem.

19. Let the glaze dry at least 30 minutes before serving.


Halloween Brownie Roll Out Cookie Sandwiches


Makes 18 cookie sandwiches, or 3 dozen cookies


Ingredients:


COOKIES 

3 cups all-purpose flour
2/3 cup cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1 cup butter, softened
1-1/2 cups sugar
2 large eggs
1-1/2 tsp vanilla extract


FILLING

6 oz. reduced fat cream cheese, at room temperature
4 Tbsp unsalted butter, at room temperature
1/2 cup confectioner’s sugar
1 Tbsp milk
1/2 tsp vanilla extract
Food coloring


Directions:

 1. Mix together the flour, cocoa, salt and baking powder in bowl and set aside.

 2. In a large bowl, cream butter, sugar together. Followed by the eggs and vanilla.

 3. Gradually add the dry flour mixture into the wet mixture. Wrap in plastic and chill for at least one hour.

 4. Preheat oven to 350 degrees.

 5. Roll out the cookie dough on floured counter to 1/4 inch thick. Use cookie dough cutters to cut into desired shapes: cut out cookies using pumpkin or skull outline side of cutter. Then, use the other side of the cutter to create skull or pumpkin faces in half of the cookies.

 6. Bake on a lined baking sheet for 10 minutes or until the edges are firm and the centers are slightly soft and puffed. Transfer to a cooling rack.

 7. Meanwhile, make the filling: In a small bowl, whisk together the cream cheese, butter, confectioner’s sugar, milk and vanilla until smooth and fluffy. Add food coloring and mix thoroughly. Spread about 1 tablespoon filling on each non-face cookie and top with a cut-out cookie.

Penuche Pumpkin Bars


Serves: 5 dozen
Cook Time: 25 Min

If you like Penuche you will love these bars. The fudge frosting will curl your toes and you will smack your lips. Great for pumpkin lovers too!!

Ingredients

 BARS:  
 1/2 c real butter
 1 c light brown sugar, packed
 2 lg eggs
 1 tsp pure vanilla extract
 1 c solid pumpkin puree
 1 c All-purpose flour
 1/2 tsp baking powder
 1/8 tsp baking soda
 1/4 tsp salt
 1 tsp ground cinnamon
 1/2 tsp ground ginger
 1/4 tsp ground nutmeg
 1 c chopped toasted nuts,optional

 FUDGE FROSTING:  
 1/2 c real butter
 1 c light brown sugar, packed
 1/4 c milk or cream
 2 c powdered sugar

Directions 
Preheat oven to 350^. Lightly butter and flour a 13x9-inch pan. Spray is best.

 Bars:
1. In a large bowl, cream together butter and sugar using an electric mixer. Add eggs and vanilla extract, mix to combine. Add pumpkin. Mix well.  
2. In a medium bowl, combine flour, baking powder, baking soda, salt, and spices, mix to combine. Slowly add flour mixture to butter mixture, Mix well. If desired, add nuts or raisins; mix until evenly distributed.  
3. Pour batter into pan, spread evenly. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Allow bars to cool in pan before topping with fudge frosting. 

Fudge Frosting:
 1. Combine butter and brown sugar in a saucepan over medium high heat; bring to a boil. Lower heat to medium low and continue to boil for 2 minutes, stirring constantly. Add milk and return to boil, stirring constantly. Transfer mixture to a medium bowl, cook to lukewarm.
2. Gradually add powdered sugar, stirring until blended well. Beat mixture until thick enough to spread; adding additional powdered sugar if needed. If fudge is too thick, add a little hot water.
 3. Frost cooled bars with warm fudge, let fudge set completely before cutting into squares. Store covered in the refrigerator for 3 days.

Pumpkin Caramel Cookies

For the cookies you will need:

1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
1 tsp vanilla
2 cups unbleached all purpose flour
1 tsp baking soda
1 tbsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp salt 

Preheat oven to 350 degrees. In a mixing bowl, cream the sugars and butter together until fluffy. Slowly add the vanilla and eggs and scrape the bowl as necessary.Stir in the pumpkin, flours, soda, salt and spices until mixture is well combined.

Drop by tablespoon onto lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Remove from oven, and while cookies are still warm, press down lightly on each cookie with the back of a cup to flatten slightly. Allow cookies to cool for several minutes on the cookie sheet before moving to a cooling rack to cool completely. 

For the Frosting: 

3 tbsp butter
1/4 cup heavy cream
1/2 cup brown sugar
1 cup powdered (confectioners) sugar
1 tsp vanilla 

In a saucepan, heat butter, brown sugar and cream until mixture comes to a rolling boil. Remove from heat and allow mixture to cool. Once mixture has cooled, add the powdered sugar and vanilla and stir until powdered sugar is incorporated.. Frost each cookie, allowing frosting to set up before stacking cookies if desired.


Pumpkin Date Cookies

 Cookies

 1/2 cups granulated sugar
 1 cup canned pumpkin
 1/2 cup butter or margarine (softened)
 1 egg
 1 teaspoon vanilla
 2 3/4 cups all-purpose flour
 1 teaspoon baking powder
 1 teaspoon baking soda
 1 teaspoon ground nutmeg
 1/2 teaspoon salt
 8 ounces chopped dates


Frosting

 3/4 cup brown sugar
 1/4 cup butter or margarine (softened)
 1 1/4 cups powdered sugar
 1 to 2 tablespoons half and half or cream
 1 teaspoon vanilla
 1/2 cup finely chopped pecans or walnuts


1. Preheat oven to 350 degrees Fahrenheit

 2. Lightly grease and set aside cookie sheets.

 3. Combine sugar, pumpkin, butter, egg and vanilla, beating at medium speed with an electric mixer until well blended.

 4. Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt, by thirds to the pumpkin mixture.

 5. Beat until a soft dough forms.

 6. Fold in dates.

 7. Drop by heaping teaspoons onto cookie sheets and bake for 15 minutes or until set.

 8. Cool completely.


For Frosting 

1. In a saucepan, combine brown sugar and butter over medium heat stirring constantly until smooth.

 2. Remove from heat and add the rest of the frosting ingredients.

 3. Stir until smooth.

 4. When cookies are cool spread evenly over them and sprinkle tops with nuts


Pumpkin Pie Snickerdoodle Bars


Recipe by Julia, author Of Dozen Flours  


Snickerdoodle Layer  

3 cups all-purpose flour 
2 teaspoons baking powder 
1 teaspoon salt 
2 cups packed brown sugar 
1 cup butter, at room temperature 
2 eggs, at room temperature 
1 tablespoon vanilla extract


 Pumpkin Pie Layer  

1 cup all-purpose flour 
1 cup white sugar 
1 stick butter, at room temperature 
1 teaspoons baking powder 
1 teaspoons salt 
1 teaspoon pumpkin pie spice 
2 eggs, at room temperature 
1 1/2 cups canned pumpkin


Topping  

2 tablespoons white sugar 
2 teaspoons cinnamon


Drizzle  

1 oz white chocolate, chopped 
1/4 teaspoon pumpkin pie spice


 Preheat oven to 350F. Lightly grease a 9x13 inch pan and lay a piece of parchment paper across the pan, so that it extends the pan slightly. The parchment paper is an optional step, but it will make it easier to get the bars out later  

To make snickerdoodle layer:  

Sift together flour, baking powder and salt and set aside. In large bowl, beat together butter, sugar, egg and vanilla until smooth. 

Stir in the flour mixture until well blended. Spread evenly in prepared pan (mixture will be thick and cookiebatter-ish.) 

To make pumpkin pie filling: 

 In a mixer bowl (you can use the same one you used to make the snickerdoodle batter) with a paddle attachment, mix together butter and sugar. A dd the rest of the ingredients and mix until well combined. This layer will be less thick and more pourable. Pour over the snickerdoodle layer, smoothing out the top.  

Combine white sugar and cinnamon in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.  

Bake for 33-40 minutes (maybe more depending on your oven) or until a toothpick inserted into the center of the pan comes out clean. Let the bars cool completely (about an hour). They will deflate a bit and remain a bit pie-like on the top layer. The bars that are closer to the edges of the pan will be more firm.

 After the bars are completely cool, place the chopped white chocolate into a bowl or zip-lock bag and melt on low power. When it's completely melted, add the pumpkin pie spice and mix (or knead if using a zip lock bag). Use a spoon or cut a small corner off the bag and drizzle the melted chocolate over the top of the bars and let it cool and harden.  

Use the parchment paper to lift the bars out of the pan. Place on a cutting board and cut into bars. Store in a covered container.
 

Pumpkin Thumbprint Cookies


Ingredients 

Cookie:

 1 cup canned pumpkin
 3/4 cups brown sugar
 1/2 cup white sugar
 1/2 cup apple sauce
 1 teaspoon vanilla
 2 1/4 cup oatmeal
 2 1/4 cup flour
 1 teaspoon baking soda
 1/2 teaspoon salt
 1/2 teaspoon nutmeg
 1/2 teaspoon ginger
 1/2 teaspoon cloves
 1 tablespoon cinnamon
 optional 1/2 - 1 cup butterscotch chips (if you add chips omit the 1/2 cups white sugar)


Frosting:

 1 - 8 ounce package of cream cheese, softened
 1/4 cup butter, softened
 4 cup powdered sugar
 1 teaspoon cinnamon
 1 teaspoon vanilla
 optional - if you want to make pumpkins, enough orange food coloring to make a deep orange
 optional - butterscotch chips for stems

Directions

 Mix pumpkin, sugars, vanilla and applesauce. In a separate bowl, mix dry ingredients together. Add dry ingredients to applesauce mixture. If adding butterscotch chips, mix them in now. 

Drop tablespoon of dough on cookie sheet, leaving 2" between cookies. (I love to use cookie scoops!) Depress your thumb into the middle of the cookie. If you thumb is sticking to the cookie dough, dip it in flour first.

Bake at 350 degrees for about 10 minute (until brown). Allow the cookies to cool completely before frosting. 

To make frosting, cream all ingredients, except butterscotch chips. For regular cookies, spoon frosting into your thumb's indentation. If making the pumpkins, use a cookie scoop, and mound the frosting on each cookie. Top with a butterscotch chip for a stem.  

Recipe makes 5 dozen cookies. If you are making pumpkins on top of the cookies, you will only have enough frosting for 3 1/2 dozen cookies.

Note: Since there is cream cheese in the frosting, I would refrigerate until time to serve.

Pumpkin Spice Sugar Cookies


This recipe is a combination of basic sugar cookies (from Martha Stewart.com) laced with brandy and pumpkin spice. You should save this for next Halloween, or use it with your Thanksgiving cookie cutters.

Makes about 15 cookies with a large cookie cutter or 20 with a small one


2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup (1 stick) unsalted butter
1 cup sugar
1 large egg, lightly beaten
2 tablespoons brandy
1/2 teaspoon pure vanilla extract
1/4 teaspoon all spice
1/4 teaspoon grated nutmeg
1/2 teaspoon ginger powder
1 teaspoon ground cinnamon


Whisk together flour, salt, baking powder and spices in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar; add dry ingredients, and mix until incorporated. With mixer running, add egg, brandy (or milk), and vanilla; mix until incorporated. 

Transfer dough to a work surface. Shape into 2 discs, cover with plastic wrap, and refrigerate for at least 1 hour (I skipped this step and it turned out fine). 

Preheat oven to 350 degrees. Line baking sheets with nonstick baking mats or parchment paper; set aside. 

On a lightly floured work surface, roll out dough to 1/8-inch thickness. Cut into desired shapes, and transfer to prepared baking sheets, leaving an inch in between. Leftover dough can be rolled and cut once more. Bake until lightly golden, about 10 minutes; do not allow to brown. Transfer to wire racks to cool.


Ultimate Halloween Peanut Butter Oreo Brownie Bar


1/2 cup butter, softened

1 cup peanut butter

1/2 cup white sugar

1/2 cup brown sugar, packed

1 egg

3 tablespoons milk

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

3/4 teaspoon baking powder

1/4 teaspoon salt

1 (9.9 oz) pkg white chocolate candy corn M&Ms or 1 cup Reese’s Pieces

1 pkg Halloween or Double Stuffed Oreos

1 Family Size (9×13) Brownie mix

1/4 cup hot fudge topping



Preheat oven to 350 degrees F. Cream the butter, peanut butter, and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs, milk and vanilla and beat until dough is light and fluffy. In a separate bowl, whisk together the flour, baking powder and salt, then slowly add to the mixer until the flour is just combined. Stir in M&Ms. Spray a 9×13 baking dish with cooking spray, line with wax paper, and spray with cooking spray again. Spread the cookie dough in the bottom of the dish. Top with a layer of Oreos. Mix together brownie mix, adding an optional 1/4 cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos. Bake at 350 degrees F for 45-55 minutes, until a toothpick inserted 2″ from the edge comes out with moist pieces clinging to it. 



Halloween Icebox Cookies

 1/2 cup Margarine
 1 cup Sugar
 2 teaspoons Vanilla
 1 Egg
 1 3/4 cups Flour
 1/2 teaspoons Baking Soda
 1 1/2 teaspoons Salt
1/2 cups chopped Nuts (optional)


Cream butter and sugar until light and fluffy. Add vanilla and egg and bean until blended. Sift dry ingredients together, and add nuts if desired. Gradually add to sugar mixture stirring after each addition. Shape into long rolls on waxed paper. Chill in refrigerator for several hours. Slice into 1/8 to 1/2 inch think. Bake on an ungreased cookie sheet at 400 degrees for about 7 minutes.  

You can also make pinwheels by dividing dough into two equal sections, add food coloring of your choice, and roll out even sections of the two colors of dough. (You would put one color of dough on top of the other and roll into a log. Chill. Then slice and bake as stated above.)



Fall Harvest Bars

A fall-themed cereal bar with candy corn and peanuts.

Ingredients
1/2 cup butter, softened
1 package yellow cake mix with pudding
1 egg
3 1/2 cups miniature marshmallows
1/2 cup light corn syrup
1/4 cup granulated sugar
1/4 cup brown sugar, firmly packed
1/2 cup creamy peanut butter
2 teaspoons vanilla extract
2 cups Crispix Cereal
2 cups peanuts, lightly salted
1 cup candy corn

Instructions
1. Preheat oven to 350°F.
2. Combine the butter, egg, and cake mix in a large bowl until well combined.
3. Press cake mix "dough" into the bottom of an ungreased 15"x10"x1" jellyroll pan.
4. Bake for 12 -15 minutes or edges are lightly browned.
5. Remove from oven, sprinkle marshmallows over hot crust, then bake for an additional 1 - 2 minutes or until the marshmallows have puffed.
6. While crust is baking, combine corn syrup, sugar, and brown sugar in a large saucepan and cook over medium heat, stirring until it comes to a boil.
7. Remove from heat and add the peanut butter and vanilla and stir until smooth.
8. Gently stir in cereal, peanuts, and candy corn to coat.
9. Spoon over warm crust and marshmallows, then wet your hands and gently press the cereal mixture to spread it over the marshmallows.
10. Cool completely, then cut into bars.

Yield: 48 bars




Homemade Chocolate Peanut Butter Pumpkins

Ingredients:
1 cup creamy peanut butter
1/4 cup butter, softened
2 cups unsifted powdered sugar
1 11.5 oz bag semisweet chocolate chips
1 tbsp shortening

1. In a large bowl mix together peanut butter, butter and powdered sugar. You'll probably have to use your hands.
2. Roll dough out on a parchment lined surface to a generous 1/4" thickness. Using a small cookie cutter, cut out your pumpkins. Reroll scraps and cut again.
3. Place cut pumpkins in the freezer. Meanwhile in a double boiler melt chocolate and shortening until smooth and liquidy.
4. Using a fork, dunk each frozen pumpkin in the chocolate, shaking off the excess. Place pumpkins on a parchment or wax paper lined baking sheet and refrigerate until set.




Pumpkin Spritz Cookies

I added a touch of cinnamon, nutmeg and ginger for an Autumn-like taste; this added a bit of spice to the basic spritz cookie recipe. The icing is simply a mix of powdered sugar and water (and food coloring, of course).

Classic Spritz Cookies

Ingredients

 1 1/2 sticks unsalted butter, softened
 1/2 cup sugar
 1/2 egg
 1/2 teaspoon vanilla (I added about 1/8 teaspoon more)
 7 ounces all purpose flour
 1/4 teaspoon cinnamon
 1/4 teaspoon nutmeg
 1/8 teaspoon ginger


Method

 Preheat oven to 375 degrees F. In a large bowl, beat butter on medium speed of an electric mixer until creamy. Add sugar, egg and vanilla; beat well. Slowly add flour, along with spices; mix well. Dough will be soft; do not refrigerate. 

Fill cookie press with dough, press onto ungreased cookie sheet 1 inch apart. Decorate with sprinkles or colored sugar if desired. Note – I stuck my cookie sheet in the freezer before pressing the dough onto it to help the dough stick better. 

Bake 10-12 minutes or until firm, but not brown. Cool 2 minutes on cookie sheet; remove to wire rack to cool. Repeat with remaining dough. Decorate with icing when cookies are completely cool. 

* I got 2-3 dozen pumpkin shaped cookies with this recipe (I can’t remember how many exactly there were before we started eating them!)




Peanut Butter Candy Corn Cookies

Peanut Butter Candy Corn Cookies 

 •1 1/2 cups all-purpose flour
 •1/2 teaspoon baking powder
 •1/4 teaspoon baking soda
 •1 1/4 teaspoons fine sea salt
 •4 ounces unsalted butter, softened
 •1 1/4 cups granulated sugar
 •1/2 cup light brown sugar
 •1 large egg
 •1/2 teaspoon vanilla extract
 •1/2 cup creamy peanut butter


 Cornflake Crunch

•5 tablespoons Reese’s peanut butter chips
 •1 cup candy corn
 •Cornflake Crunch
 •4 cups cornflakes
 •1/2 cup instant non-fat milk powder
 •3 tablespoons light brown sugar
 •1 teaspoon salt
 •5 ounces unsalted butter, melted


Instructions

Cornflake Crunch   

1. Preheat oven to 275 degrees. Line baking sheet with parchment paper or aluminum foil.

2. In a medium bowl combine cornflakes instant non-fat milk powder, light brown sugar, and salt. Give it a good toss to help coat the flakes evenly. Pour melted butter over flake mixture, stir with a wooden spoon until combined. Evenly distribute flake mixture over prepared pan. Bake for 18-20 minutes.

3. Allow flakes to cool completely before adding into the cookie batter.


 Peanut Butter Candy Corn Cookie Batter

4. Line 3 baking sheets with parchment paper or a silicone mat.

5. Whisk together flour, baking powder, baking soda, and salt into a small bowl. Set aside.

6. Cream butter and both types of sugar in a bowl with a hand-held or stand mixer on medium speed until fluffy. Add egg and vanilla, reduce speed to low and beat just until combined.

7. Alternate adding dry ingredients and peanut butter.

8. Stir in cooled Cornflake Crunch, Reese’s peanut butter chips and candy corn.

9. Scoop cookie dough using a 1/4 cup cookie scoop and place 6 onto each of the prepared baking sheets. Flatten cookies out slightly and transfer to the refrigerator to chill for about 3 hours.

10. When ready to bake place oven rack in the center and pre-heat oven to 375 degrees. Bake cookies one sheet at a time for 13-15 minutes.

11. Allow cookies to cool on tray before serving.
