Cappuccino Squares

Makes 24 squares


 1/2 cup (1 stick) butter, melted
 18.25 oz. yellow cake mix
 1 egg
 2 tablespoons (1 oz.) Kahlua or coffee liqueur
 1/3 cup milk
 1 tablespoon instant coffee
 2 eggs
 3/4 cup sugar
 2 tablespoons all-purpose flour
 1/2 teaspoon baking powder
 1 teaspoon vanilla


 Powdered sugar to sprinkle on bars (or combine 1/2 cup with tablespoon of milk for a drizzling glaze)

 Preheat oven to 350 degrees F and coat an 11 x 7” baking pan with cooking spray.

 Melt butter in a microwavable mixing bowl. Combine the cake mix, beaten egg and coffee liqueur with the butter. Reserve 1/2 cup of batter in the freezer. Spread the remaining batter in prepared pan. Bake in 350 degree oven for 15 minutes.

 In the same mixing bowl, beat two eggs. Dissolve instant coffee in the milk. Add milk, sugar, flour baking powder and vanilla to the eggs and beat until smooth. Pour mixture over the warm base and crumble reserved base mixture over the top. Return to oven for an additional 25 minutes.

 Let bars cool in pan for about 30 minutes or chill in fridge. Cut into squares and sprinkle on powdered sugar or drizzle on glaze.
