Rolo Stuffed Brownie TrufflesIt all starts with a brownie mix.
I used Pillsbury Fudge Brownie Mix in “Family Size”.
I normally bake brownies in a 9×9 because I like a thicker brownie, but bake these in a 9×13. They will bake and cool faster.
Bake your brownies according to package directions and let cool completely.
When brownies are cooled trim off the hard edges.
What you do with these edges is up to you, but I won’t judge you if you eat them all…not because that’s what I did…*cough cough*
Then mash ‘em up.
You won’t need to add frosting or any other binder because these brownies are really fudgy and hold together with no problem.
One box of brownies will make *roughly* 2 dozen truffles.
Now unwrap your Rolos.
If you are from Uranus and don’t know what Rolos are..they are delicious chocolate covered caramels.
Now form your truffles.
They hold together really well, so I didn’t find that I needed to chill the truffles before dipping…but I am sure you could with no problem.
I chopped about a cup of pretzels to use as the topping…
I melted 6 oz of white almond bark with 1 Tablespoon of vegetable shortening (to thin it a bit) over a double boiler.
Then I dipped each truffle in the candy coating, tapping off the excess, and placed it on a waxed paper lined baking sheet.
Immediately sprinkle your crushed pretzels on the dipped truffle because the candy coating sets very quickly and you want the pretzels to stick.
They will be ready to go in 10-15 minutes!
That’s it!
After you bake your brownies according to directions on the box, let them cool completely.
While they are cooling you make your “egg-free” cookie dough like I did HERE.
Make your egg-free cookie dough:
1 c. butter, softened
1 c. packed light brown sugar
1/2 c. granulated sugar
4 Tbsp. milk
2 tsp. vanilla extract
1 t. salt
2 c. all-purpose flour
1 1/2c. mini semi-sweet chocolate chips
Combine first 5 ingredients in a mixing bowl and cream together. Add flour and stir until combined. Stir in chocolate chips.
Chill the dough for an hour or so..just so it’s not quite as sticky.
Next, form your dough into small balls…the size of a large marble.
Now you will need to freeze your cookie dough balls for about 15 minutes so you are able to cover them in brownie without them squishing all over the place.
Cover the cookie dough ball with brownie and line on a wax papered baking sheet.
Dip in your melted chocolate and let set.
Now…here’s where I decided to keep going.
Reeses Stuffed Brownie Truffles / Milky Way Stuffed Brownie Truffles
I bought Reeses Minis at the store…which are perfectly cute and dangerous for those of us who love Reeses…they come already unwrapped. Totally poppable. Totally dangerous.
And then I decided to try stuffing them with some mini Milky Ways.
It’s good stuff people!
There are really endless possibilities here!
