Vermont Maple Bars

makes 16 bars 

Crust:

1 1/4 cup flour
1/2 cup unsalted butter, softened
1/4 cup powdered sugar 

Combine all ingredients in a food processor, process until it resembles a course meal.  Press into a greased 9 x 9 square pan.  Bake at 350 F for 15-20 minutes, until edges start to golden.


Filling:

2 eggs, beaten
2/3 cup sugar
3/4 cup VT maple syrup
2 tbsp flour
1/4 tsp salt
2 tbsp melted butter
1 1/2 tsp vanilla
1 cup roasted walnuts 

Combine ingredients in a bowl and beat well until mixture is well incorporated.  Add nuts.  Pour filling over hot crust, return to oven and bake for 25 minutes, or until firm.  Let cool and cut into squares.
