2 cups al- purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar + 1 tablespoon, divided use
1 teaspoon vanilla extract
1 large egg
1/4 cup whole milk, or half-n-half, or coconut milk
3/4 teaspoon ground cinnamon


Heat oven to 350 degrees F. Coat cookie sheets with cooking spray. 

In a medium mixing bowl, sift together flour, baking soda, cream of tartar and salt. In a large mixing bowl, using a mixer on medium speed, beat together butter, 1 cup sugar and vanilla until creamy - about 1 minute. Beat in egg and milk until combined. Reduce mixer speed to low and gradually beat in flour mixture until just combined.  

Using a cookie scoop, scoop out dough onto cookie sheets. In a small bowl, stir together remaining 1 tablespoon sugar and cinnamon until well combined. Sprinkle cinnamon-sugar on top of cookies. Bake 8 minutes or until light golden brown and set. Transfer cookies to wire racks to cool completely.


Makes about 20 cookies
