6 tablespoons unsalted butter
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups old fashioned oats
1/2 cup creamy peanut butter
3/4 cup packed brown sugar
1/4 cup pure maple syrup
2 large eggs
1 teaspoon vanilla extract
1 cup coarsely chopped Maple Nut Goodies
Preheat oven to 350 degrees F. Coat cookie sheets with cooking spray.
Melt butter in a small saucepan over medium heat; cook 2-3 minutes, whisking frequently until butter browns and starts to foam. Remove from heat and cool in the refrigerator until butter solidifies.
In a medium sized mixing bowl, sift together flour, baking soda and salt; whisk in oats until combined. In a large mixing bowl, using a mixer on medium speed, beat together browned butter, peanut butter, brown sugar and maple syrup until creamy - about 2 minutes; beat in eggs and vanilla until combined - about 2 minutes. Reduce mixer speed to low and gradually beat in flour mixture until combined; stir in maple nut goodies until combined.
Place heaping tablespoons of dough onto cookie sheets and flatten using palms of hands. Bake 12-13 minutes or until well risen and golden. Cool 1 minute before transferring to wire racks to cool completely.
