Lime Bars Frosted with a Lime Buttercream

Makes an 8-inch square baking dish


Ingredients:

½ c. unsalted butter, softened
¼ c. confectioner’s powdered sugar
1 c. flour (I use King Arthur Unbleached All Purpose Flour)
2 large eggs
1 c. sugar
2 Tbsp. flour
½ tsp. baking powder
 2 Tbsp. fresh lime juice
Grated rind or peel from one lime
4 Tbsp. (½ stick) unsalted butter, softened
2 c. confectioner’s powdered sugar
¾ tsp. pure vanilla extract
Grated rind or peel from one lime
Freshly squeezed juice from ½ of a lime


Directions:

 * Preheat your oven to 350 degrees. Coat an 8-inch square baking dish with butter.

 * Make the crust. In a medium bowl, combine items 1-3 together until mixture is crumbly. Press evenly into the bottom of your prepared baking dish and bake for 15 minutes. Remove from oven and place on a wire rack.

 * In the meantime, make the filling. In a mixing bowl, beat items 4-9 together for one minute or until smooth and well blended. Pour over warm crust and return to the oven. Bake for 20-23 minutes or until top is very lightly golden. Cool completely in the baking dish on a wire rack.

 * Make the Lime Buttercream. In a mixing bowl, beat items 10-14 together until smooth. Carefully spread evenly over cooled bars.

 * Allow frosting to set for a few hours before cutting into bars.

 * Store any leftovers in an airtight container at room temperature for up to 3 days.
