Ginger Apple Oatmeal Cookies

120 grams (1/2 c) softened butter
200 grams (3/4 c) sugar
2 large eggs
200 grams (3/4 c) flour
1 heaping tsp. cinnamon
1/2 tsp baking soda
3 Tbsp. milk
150 grams (1/2 c) oatmeal (not the instant)
50 grams (1/4 c) crystalized ginger, chopped
50 grams (1/4 c) dried apples, chopped


Preheat oven to 180C (350 degrees F.) and line cookies sheets with parchment paper.

Beat together the sugar and eggs until light and fluffy. Add eggs and continue to beat. In a small bowl combine flour, baking soda and cinnamon. Add to butter mixture alternately with the 3 Tbsp. milk. Stir in the oatmeal, apples & ginger.

Spoon spoonfuls of mixture and bake until golden approx. 15-18 min.
