1 1/2 cups firmly packed brown sugar
1 cup butter, softened
1 egg
2 teaspoons freshly grated lemon zest
2 cups uncooked quick cooking oats or old-fashioned oats
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Stir-ins: 1 cup of stir-ins from the list below.
Directions
Heat oven to 375°F. Combine brown sugar, butter, egg and
lemon zest in large bowl. Beat at medium speed, scraping bowl often, until
creamy. Reduce speed to low; add all remaining ingredients except stir-ins.
Beat until well mixed.
Stir in desired stir-ins from list by hand.
Drop by tablespoonfuls onto ungreased cookie sheets.
Bake for 10 to 14 minutes or until lightly golden brown on
edges. Cool 1 minute before removing from cookie sheet. Cool completely.
Suggested Stir-ins:
Raisins, cut-up gumdrops, green or red chocolate coated
candies, chocolate-covered raisins, chopped nuts, chocolate, butterscotch or
vanilla chips, toffee chips, cut-up candy bars etc.
Yield: 3 1/2 dozen cookies.
