Dulce de Leche Filled Brownie Bites

Brownies 

 11.5 oz (300 gr) dark chocolate
 1 c butter
 1 1/2 c granulated sugar
 1/2 c packed brown sugar
 5 eggs room temp
 2 tsp vanilla
 1 1/4 c all purpose flour
 2 tbs cocoa powder
 1 tsp salt 

 1/2 c Dulce De Leche for filling 

14 oz chocolate (400 gr) dark chocolate for coating plus sprinkles, sea salt, really anything to pretty the bites up.


In a double boiler or large heat proof bowl above simmering water add butter and chocolate stirring until melted.  Once it’s melted remove from heat and add in sugars stirring until well combined.  Wait for mixture to come to room temp about 30 minutes. 

Preheat oven to 350 F and move rack to middle of the oven.  Grease a 9×13 baking pan, line with parchment and grease the parchment.  Set aside. 

To the room temperature chocolate mixture add eggs and vanilla whisking until just combined.  You really don’t want to over mix as it will effect the texture of your brownies. 

Sprinkle flour, cocoa powder and salt over wet.  Gently combine until no big lumps remain. Again with the do not overmix business. 

Bake for 30-35 minutes until a toothpick inserted in the middle comes out with just a few crumbs on it. 

Now sit and watch the brownies come to room temp.  Yep there is a lot of waiting involved. 

Now the fun part. 

Assembly 

Get a large bowl and dump your brownies into the bowl.  Mix with your hands until it starts to come together a bit.  Using a cookie scoop or a tablespoon scoop up a ball of mixture.  I used about a tablespoon of brownie for each ball.  Knead in your hands until glossy, then using your pointer finger poke the brownie and make a deep cup.  - Sorry bad pic but you get the idea.


Fill the cup 3/4 with dulce de leche.  Fold over the top covering the dulce de leche with brownie and very gently roll into a ball.  Don’t worry if it doesn’t seal up tight it’s just gonna get covered in chocolate anyways.


Once your done creating all your ball put them in the fridge (an hour or 2) or the freezer (30 minutes) until cold. 

Line 2 baking sheets with parchment or wax paper.  Using your double boiler melt chocolate until smooth. Turn off heat and using a folk dip one bite at a time in chocolate, very fast tap the folk with the brownie bite on it against the side of the double boiler to knock off any excess chocolate.  Using a toothpick gently push the chocolate covered brownie on to the baking sheet. 

*I would dip 4 then go back and drop salt or sprinkles on the first one working my way to the fourth and repeat.  If you drop your decoration on them as soon as they come out of the chocolate the salt will melt or the sprinkles will slide off. 

Repeat until done.  You can put anything your little heart desires on the top of these.
