Sift flour, icing sugar and baking powder into a large bowl. Cut butter into small pieces, add to the flour and stir until the mixture is lumpy. Add egg yolks and sour cream and knead the dough (you can do it in the blender). Divide the dough into two parts 1/3 and 2/3. Wrap in foil and chill in the refrigerator (at least several hours) or freezer (about an hour).
Filling:
Place sliced apples in a saucepan, add water and simmer covered for about 15 minutes, do not mix. Add the cinnamon and sugar and stir gently. Mix cornstarch with lemon juice, add to the weight of apple and simmer for 2 minutes. The mixture should be very thick, but do not overcook.
