Oatmeal Date Cookies

Even people who don’t care for dates will enjoy these! With a crisp oatmeal cookie and gooey center, they’re easily liked. 

For the cookies:

 •1 cup butter (softened)
 •1 cup brown sugar
 •1 egg
 •1 cup flour
 •1/2 tsp salt
 •1 tsp baking soda
 •1 tsp baking powder
 •2 cups oatmeal


For the filling:

 •230g dates
 •1/2 to 1 cup of water (depending on how gooey you want them)
 •1/2 cup sugar
 •2 tbsp lemon juice 

Heat the oven to 177c/350f degrees. 

To make the cookies, cream together the butter and the brown sugar. Add the egg and mix thoroughly. 

Combine flour, salt, baking soda and baking powder. Add oatmeal and mix well. 

Add the dry ingredients to the wet and mix well. 

Roll into 1 inch balls and flatten. 

Bake on an ungreased cookie sheet for 10 minutes. Cool on a wire rack. 

To make the filling, combine the dates, water, sugar and lemon juice in saucepan and bring to a boil. Once the mixture is boiling, reduce the heat and simmer for about 15-20 or until the mixture is thick and spreadable. 

To assemble spread one cookie with a small dollop of date filling and place a second cookie on top to form a sandwich.
