Strawberry Crumb Bars



{original recipe found on A Thought For Food who slightly adapted it from Smitten Kitchen}


1 cup white sugar 

1 teaspoon baking powder 

3 cups all-purpose flour 

1 cup cold unsalted butter (2 sticks or 8 ounces) 

1 egg 

1/4 teaspoon salt 

Zest and juice of one lemon 

3 cups fresh strawberries, quartered lengthwise 

1/2 cup white sugar 

4 teaspoons cornstarch 



- Preheat your oven to 375 degrees. Grease a 9x13 pan, and set aside.


- In a large bowl, combine the flour, 1C. sugar, baking powder, salt, and lemon zest. Using a pastry cutter, or fork, cut in the butter and egg. You'll end up with a crumbly dough. Pour half of the dough in the prepared pan, and lightly press it down. 


- In a medium bowl, combine the lemon juice, corn starch and 1/2C. sugar. Stir in the berries until well coated. Pour the berry mixture into the pan, covering the pressed dough. 


- Sprinkle the remaining dough over the strawberries, and bake for 45 minutes. {or until golden brown}. Once out of the oven, wait for them to cool before cutting.
