Panko-Encrusted Wasabi Brownie Recipe

Yield: An 8" square pan of brownies

 •3/4 cup all-purpose flour

 •1 cup sugar

 •5 tablespoons cocoa powder

 •1/2 teaspoon salt

•1/2 cup unsalted butter, room temperature

 •2 large eggs

 •1 teaspoon vanilla extract

•2 1/4 teaspoons wasabi paste You can buy this at Amazon.com

•1/2 cup chocolate chunks or chocolate chips

 •1/2 cup panko

 1.Preheat oven to 350 F.

2.Butter and lightly flour an 8" square baking pan.

3.Mix all ingredients except the chocolate chunks and the panko in a medium-sized mixing bowl until fully combined.

 4.Fold in chocolate chunks.

5.Pour into prepared baking pan and use a spatula to evenly spread the batter.

 6.Bake for 15 minutes.

7.Remove from the oven and evenly distribute the panko on top of the partially-cooked brownies.

8.Return to the oven and bake for another fifteen minutes or until a toothpick comes out dry.

9.Ideally, you should wait for them to cool prior to cutting (they'll cut more cleanly), but then you'd miss the joy of hot brownies.  So, I say, make a mess and eat some right away!
