Marzipan Pistachio Cookies


Ingredients:

 •250g flour
 •2 teaspoons cinnamon
 •pinch of salt
 •130g icing sugar
 •100g butter
 •1 egg
 •1 egg yolk
 •80g chopped pistachios
 •Weight 400g marzipan
 •5 tablespoons milk
 •2 tablespoons rum 

Method of preparation:

 1. Sift flour, cinnamon, a pinch of salt, 80g icing sugar, butter, cut into chunks, egg, egg yolk knead to a uniform mass. Wrap in cling film and refrigerate for 2 hours.

 2. 10g pistachios set aside. The rest of the grind. Add to the weight of the marzipan and knead smooth. From mass to form three rollers with a length of 30cm.

 3. Divide the dough into 3 parts. Each roll posypanym flour on the counter, into a rectangle measuring 10 X 30 cm. The dough spread with a brush with milk. The dough roller weight put marzipan and roll. The resulting three rollers arranged on a baking tray lined with baking paper merging down. 

 4. Bake in preheated oven about 25 minutes. at 180 ° C.

 5. 50g caster sugar mixed with rum. Still warm rolls spread with frosting and sprinkle with pistachios odłożonymi. Cool on a wire rack of the oven. Successively cut into slices with a thickness of about 1.5 cm.
