Pumpkin Spice Cookies with Icing




2 1/2 cups of flour
1 1/3 cups of rolled oats
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon freshly ground nutmeg
1/2 cup white granulated sugar
1/2 cup brown sugar
2/3 cup of canola oil
2 tablespoons molasses
1 cup pumpkin puree
1 teaspoon vanilla
1 1/2  tablespoon of ground flax seed


Icing -
2 cups sugar
3 tablespoons of milk
1 tablespoon of melted butter
1 teaspoon vanilla
1 cup of ground pecans or walnuts.


Combine all icing ingredients with the exception of the nuts with a whisk.  Sprinkle tops of iced cookies with nuts.

Preheat oven to 350 degrees.

Mix flour, oats, soda, salt and spices in a small bowl.

In mixer combine sugars, oil, molasses, puree, vanilla and flax seed. 
Mix in flour and oat mixture.

Drop by teaspoons onto lightly greased cookie sheet.  If you want them pretty, wet your finger and smooth out any ridges.  Bake for 8 min.  Let cool for a minute or two before transferring to rack. 

When cool drizzle with icing and sprinkle with nuts.
