Butterscotch Cheesecake Bars



• 1 bag (11 ounces) butterscotch chips
• 1/3 cup margarine
• 2 cups graham cracker crumbs
• 1 cup chopped nuts
• 1 package (8 ounces) cream cheese, softened
• 1 can (14 ounces) sweetened condensed milk
• 1 jumbo egg
• 1 teaspoon vanilla
 

PREPARATION:
In saucepan, over low heat, melt butterscotch chips and margarine, stir to combine. Watch carefully to prevent scorching. Stir in graham cracker crumbs and nuts; mix well. Press 3/4 of mixture over bottom of a 9-by-13-inch baking pan; reserve remaining mixture.

In mixing bowl, beat cream cheese with electric mixer until fluffy. Add condensed milk, egg and vanilla; beat until creamy.

Pour mixture over bottom crust in pan. Top with reserved graham-cracker crumb mixture.

Bake at 350 degrees for 30 to 35 minutes, or until toothpick inserted in center comes out clean. While bars are warm, run a knife or spatula around edges to loosen. Cool, then cut into bars. Chill until ready to serve. Makes about 28 bars.
